Cocktails


ESPRESSO MARTINI

Absolut Vodka, Kahlua, Freshly Made Merlo Espresso.The honour of this deliciously smooth cocktail invention goes to British bartending guru Dick Bradsell. He is credited with revolutionizing the cocktail scene in London in the 1980s, through his work at bars such as The Player, 6 Degrees and Match – and the invention of modern classics like the Bramble. 


TOBLERONE

Frangelico, Baileys, Kahlua, Cream. Toblerone, a portmanteau of Theodore Tobler and the Italian ‘torrone ‘nougat, was invented in 1908 in Bern, Switzerland by young Theodore and his cousin Emil Bauman. The cocktail was later created in 2003 and become a hit straight away world-wide. 


MARGARITA

Patron Silver Tequila, Cointreau, Fresh Lime Juice. The margarita was invented in 1942 by American named Francisco Morales. He enjoyed spirits but did not want to drink them straight. It is said that the name originates from a woman he met at the bar, called Margaret.


PIÑA COLADA

Bacardi Carta Blanca Rum, Coco López Cream of Coconut, Fresh Pineapple Juice. The piña colada hails from San Juan, Puerto Rico where it was created by bartender Ramón “Monchito” Marrero at the Caribe Hilton in 1954. He mixed up a fruity blend of rum, coconut cream and pineapple juice and boom. Everyone’s favourite summer treat was created.


MARTINI, CLASSIC or 50/50

Tanqueray No. Ten Gin, Dolin Dry Vermouth, Regans’ Orange Bitters. There are also assertions that it originated in New York’s Knickerbocker Hotel. Still others assert that the drink was named after “Martini & Rossi” vermouth, which was first created in the mid-1800s. Apparently in the interest of brevity, the drink became known as the “Martini.”


WHITE RUSSIAN

Stolichnaya Vodka, Kahlua, Cream. The drink was conceived in 1949 when Gustave Tops, a Belgian barman, created the cocktail, along with its sister cocktail, the Black Russian – a White Russian without any cream – at the Hotel Metropole in Brussels in honor of Perle Mesta, then U.S. ambassador to Luxembourg.


APEROL SPRITZ

Aperol, De Bortoli Prosecco, Fever Tree Premium Soda. The name appears to trace back to the 1800s when portions of the Veneto region of northern Italy were controlled by the Austro-Hungarian Empire. Visitors and soldiers from other parts of the empire were said to have found Italian wines too strong and so lightened them with a splash (a “spritz,” in German) of water.


TOM COLLINS

Tanqueray No. Ten Gin, Fresh Lemon Juice, Home Made Simple Syrup, Fever Tree Premium Soda. The first recorded Tom Collins recipe is from the second edition of Jerry Thomas’ book, “The Bartender’s Guide”, published in 1876, in which the Tom Collins is a class of drink, with the type of alcoholic spirit being used specified after the name Tom Collins.


DAIQUIRI

Bacardi Carta Blanca Rum, Fresh Lime Juice, Home Made Simple Syrup. The drink was supposedly invented by an American mining engineer named Jennings Cox, who was in Cuba at the time of the Spanish–American War. It is also possible that William A. Chanler, a US congressman who purchased the Santiago iron mines in 1902, introduced the daiquiri to clubs in New York in that year.


BRANDY ALEXANDER 

Chatelle Napoleon Brandy, Tempus Fugit Dark Crème de Cacao, Cream, Nutmeg. This cocktail is known to have been John Lennon’s favourite drink. It was possibly named after Troy Alexander, a bartender at Rector’s, a New York City restaurant, who created it in order to serve a white drink at a dinner party celebrating Phoebe Snow, a character in a popular advertising campaign in the early 20th century.


MOJITO

Havana Club 3YO Anos Rum, Fresh Lime Juice, Home Made Simple Syrup, Fever Tree Premium Soda. Havana, Cuba, is the birthplace of the mojito, although its exact origin is the subject of debate. It was known that the local South American Indians had remedies for various tropical illnesses, so a small boarding party went ashore on Cuba and came back with ingredients for an effective medicine.


NEGRONI

Bombay Saphire Gin, Campari, Antica Formula Sweet Vermouth. The most widely reported version of this drink’s origin is that it was invented at Caffe Casoni in Florence, Italy in 1919. Legend tells that Count Camillo Negroni asked his friend, bartender Forsco Scarselli, to strengthen his favourite cocktail – the Americano – by replacing the soda water with gin.


DARK ‘N STORMY TM

Gosling’s Black Seal Rum, Brookvale Union Ginger Beer, Angostura Bitters. So the story goes sometime after World War 1, the Dark ‘n Stormy was born. It has its origins in a Ginger Beer factory that was run by the Royal Naval Officer’s Club. The sailors soon discovered that a hefty splash of the local Gosling’s Black Seal rum was a great addition to the ginger beer. 


SAFE HARBOUR

Mount Gay Black Barrel Rum, Brookvale Union Ginger Beer, Angostura Bitters. The Name “Dark and StormyTM” is a trademark owned by the Gosling Brothers, so to make the drink with anything but their rum is technically breaking the law! What to do? Change the name to “Safe Harbour” of course. This not only circumvents the infringement of any trademarks but it’s also a fitting description as the drink loses its foreboding “stormy” appearance and takes on the hue of calmer skies. 


WHISKEY SOUR

(recipe by Neil Bodenheimer, Cure Bar, New Orleans) Bulleit Bourbon Whiskey, Fresh Lemon Juice, Home Made Simple Syrup, Angostura Bitters, Egg Whites. The Whiskey Sour officially dates back to the 1860s, but sailors in the British Navy had been drinking something very similar long before that. On long sea journeys, water was not always dependable, so to combat that, spirits were often used.


VESPER MARTINI

Gordon’s London Dry Gin, Stolichnaya Vodka, Cocchi Americano Vermouth (standing in for Kina Lillet).The Vesper, also known as the Vesper Martini, was made famous by James Bond. The cocktail was invented by none other than Bond author Ian Fleming. The drink first appeared in his book “Casino Royale,” which was published in 1953, and the cocktail is named for the fictional double agent Vesper Lynd. “Shaken and not stirred” Dr. No – 1958


MIDORI SPLICE

Midori Melon Liqueur, Malibu, Fresh Pineapple Juice, Cream. As history goes, this drink was modelled on the Splice ice cream sold in Australia... At some point in time, a very intelligent person decided to turn this into an alcoholic cocktail for adults… similar in style to the Pina Colada but with a twist!


OLD FASHIONED

Woodford Reserve Bourbon, Angostura Bitters, Sugar, Orange. Rumoured to have been created in the 1880s in honour of Colonel James E. Pepper at the Pandennis Club in Louisville, Kentucky. The ‘old fashioned’ is the quintessential cocktail – Spirit, Bitters, Sugar and Water. The best way to enjoy this drink is to let the bourbon speak for itself. We do this by highlighting that exact thing. Sometimes, less is more. 


MANHATTAN 

Knob Creek Rye Whiskey, Dolin Rouge Vermouth, Angostura Bitters, Luxardo Cherry. The most popular theory as to the origins of this cocktail was that it was invented by Iain Marshall at the Manhattan Club in New York in the mid-1870s. Mr Marshall created the drink specifically for a banquet hosted by Lady Randolph Churchill, the mother of Sir Winston Churchill. The success of the banquet made the drink fashionable, later prompting people to request the drink by referring to the name of the club where it was created.

LEMON, LIME & BITTERS - FROM SCRATCH

Angostura Bitters, Schweppes Lime Juice Premium Cordial, Schweppes Lemonade, Fresh Lime. The exact origin of lemon, lime and bitters is unknown, however it is claimed to have been invented and popularised within Australia sometime around 1880. Consequently, LLB is commonly consumed in Australia and New Zealand where it became customary for golfers to have a drink of LLB after a round.


FROZEN APPLE MARGARITA

Crushed Tasmanian Apple Juice, Freshly Squeezed Orange Juice, Fresh Lime Juice, Crushed Ice, Lime Wheel. Our take on a "wholesome" version of the Margarita. We start by substituting the Tequila with apple juice (Tasmanian of course) and replace the Cointreau with freshly squeezed orange juice. We then add fresh lime juice to the mix and shake over ice for fifteen seconds. Finally, we strain the contents into a salt rimmed glass over crushed ice and garnish with a lime wheel - Delicious and conscience cleansing.


COS-NO-POLITAN

Seedlip Grove 42, Cranberry Juice, Fresh Lime Juice, Home Made Simple Syrup. An indulgent drink with a delightful bright pink hue, this Cosmopolitan mocktail is an alcohol-free version of the iconic drink made famous on Sex and the City. Served in a coupe glass with an orange twist, this is the perfect drink for a "good" girls night out.


LIGHT & BREEZY I 17

Seedlip Grove 42, Fever Tree Ginger Beer, Slice of Lime. Ginger beer and Seed lip Grove 42 are a perfect match as the beer compliments the warm ginger notes in the Grove 42 but adds a little fizz, which we always seem to crave when the weather warms up. Ideal for a little treat after a long day.

Our House Champagne and France’s largest, family-owned Champagne House.

In 1881, when Cellar Master Eugène Laurent inherited the Alphonse Pierlot Champagne House, he provided it with the essential foundations required to produce great champagnes. He purchased vines in the very best terroirs of Bouzy, Tours-sur-Marne, and Ambonnay, excavated 800 metres of cellars, and set up a tasting laboratory. 

That is how the Domaine Laurent-Perrier (the Estate) was anchored in Tours-sur-Marne. This picturesque village is ideally situated at the crossroads of the three main wine growing areas of the Marne département: the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs. It is also part of the 17 Champagne villages ranking in the prestigious ‘Grand Cru’ area.
